Ingredients
2chicken breaststhinly sliced
2nests rice noodles
1tbspvegetable oil
1red pepperthinly sliced
1carrotgrated or julienned
1spring onionfinely sliced
½cucumberhalved and thinly sliced
2tbspsweet chilli sauce
1tbspsoy sauce
Juice of ½ lime
Fresh coriander or mintoptional
Toasted sesame seedsoptional, for garnish
Instructions
Cook the rice noodles according to the packet instructions. Once done, rinse under cold water to stop the cooking and prevent sticking.
Heat a non-stick frying pan likethis over medium-high heat and add the oil. Add the chicken and cook for 6–8 minutes until golden and cooked through.
Add the sweet chilli sauce and soy sauce to the chicken. Stir well and cook for 1–2 more minutes until the chicken is glossy and coated.
In a large bowl like this, combine the cooked noodles, red pepper, carrot, cucumber, and spring onion. Squeeze over the lime juice and toss everything together. Use a citrus juicer likethis for max flavour
Add the warm sweet chilli chicken and toss again to coat everything in the dressing. Top with fresh herbs and sesame seeds if using.
