Sweet, sticky beef with crunchy veg, fresh cucumber and a spicy sriracha mayo – all wrapped up in soft tacos.

Instructions
Prep everything first: slice up the onion and pepper thinly. Peel and grate the garlic, you can grate the garlic or use a garlic press like this for extra speed and less mess. Slice your cucumber into half-moons, pop it in a bowl with the rice vinegar, sugar and a pinch of salt, and give it a quick toss. Set that aside to pickle.
Get your frying pan nice and hot with a drizzle of oil. I use a large non-stick frying pan like this – plenty of room to brown the beef and cook everything evenly. Add the beef mince and cook for 2-3 minutes until it starts to brown, breaking it up with your spoon as you go. Add the sliced onion and pepper, and keep frying for another 4-5 minutes until they’re soft.
While that’s cooking, mix half the sriracha with all the mayo in a little bowl – that’s your spicy mayo ready to go.
Once the beef and veg are looking good, stir in the garlic and ginger puree. Let it cook for about a minute till fragrant, then pour in the soy sauce, ketjap manis, honey, and the rest of the sriracha. Give it a good stir and let it bubble away for a minute until it’s glossy and sticky. Turn off the heat.
To serve: lay out your soft tacos, spread some sriracha mayo on each, pile on the sticky beef mix, and top with the pickled cucumber. If you want to get fancy, taco holders like these keep everything neat and make serving super easy. Tuck in and enjoy!
