Golden halloumi and roasted veg wrapped in warm flatbreads, simple, colourful, and packed with flavour.

Ingredients
1courgettesliced into half-moons
1red or yellow peppersliced
1red onioncut into wedges
2tbspolive oil
1tspdried oregano
Salt and pepperto taste
200ghalloumisliced
2large flatbreads or wraps
Hummus or yoghurtfor spreading
Fresh herbslike parsley or mint, to serve
Lemon wedgesto serve (optional)
Instructions
Preheat your oven to 200°C (180°C fan). Spread the courgette, pepper, and red onion on a large baking tray likethis, it gives everything space to roast properly. Drizzle with olive oil, sprinkle with oregano, and season well. Roast for 20 minutes until tender and slightly charred.
Meanwhile, slice the halloumi using a sharp knife. Heat a non-stick frying pan or griddle likethis over medium heat and cook the halloumi for 2–3 minutes on each side until golden. Use tongs or a wide spatula likethis to flip it gently without it falling apart.
Warm the flatbreads in a dry pan or microwave, then spread each one with hummus or yoghurt.
Layer on the roasted veg and grilled halloumi. Sprinkle over some fresh herbs, add a squeeze of lemon if you like, then roll or fold into wraps.
