Garlic Butter Steak Bites with Potatoes

Juicy steak bites and crispy golden potatoes tossed in garlicky butter...simple, hearty, and seriously satisfying.

Ingredients

  • 300 g sirloin or rump steak cut into bite-sized cubes
  • 250 g baby potatoes halved or quartered
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves finely chopped
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp fresh parsley chopped (optional, to serve)

Instructions

  • Bring a pot of salted water to the boil. Add the chopped potatoes and cook for 8–10 minutes until just tender, then drain and pat dry. A sharp knife like this makes prepping the steak and potatoes so much quicker and neater.
  • Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat, I use a stainless steel pan like this one...it gives you that gorgeous golden crust on the steak and helps the potatoes go nice and crispy. Add the potatoes and cook for 8–10 minutes, turning occasionally, until golden and crispy. Season with salt and pepper. Transfer to a plate and set aside.
  • Season the steak bites with salt, pepper, and smoked paprika. Heat the remaining oil in the same pan over high heat.
  • Add the steak in a single layer (work in batches if needed) and sear for 2–3 minutes per side until browned and just cooked through. Don’t overcrowd the pan.
  • Reduce heat to medium, return all steak bites to the pan, and add the butter and garlic. Stir for 1–2 minutes until the butter is melted and the garlic is fragrant (but not browned). You can finely chop the garlic or use a garlic press like this if you want to save time.
  • Toss the crispy potatoes back into the pan and stir everything to coat in the garlic butter.
  • Serve immediately, sprinkled with chopped parsley if you fancy.
