Golden halloumi and roasted Mediterranean veg, all cooked on one tray for a no-fuss, flavour-packed meal.

Ingredients
450ghalloumisliced
2red peppersdeseeded and chopped
2courgettessliced into rounds
1large red onioncut into wedges
250gcherry tomatoes
3tbspolive oil
1tspdried oregano
1tspsmoked paprikaoptional
Salt & black pepperto taste
Fresh basil or parsleyto garnish

Instructions
Preheat the oven to 200°C (180°C fan). Line a large baking tray with parchment paper.
Add the chopped peppers, courgettes, red onion, and cherry tomatoes to the tray. Drizzle over 2 tablespoons of olive oil, sprinkle with oregano, smoked paprika (if using), salt, and pepper. Toss everything together to coat evenly.Tip: Spread everything out on a baking tray like this so it roasts up nice and caramelised.
Roast the veg in the oven for 20 minutes, giving it a quick stir halfway through.
After 20 minutes, remove the tray from the oven. Nestle the halloumi slices on top of the veg and drizzle over the remaining tablespoon of olive oil.
Pop the tray back in the oven for another 10–12 minutes, until the halloumi is golden and starting to crisp around the edges.
Sprinkle with fresh basil or parsley, and serve hot with lemon wedges on the side. Great with couscous, rice, or flatbreads if you want to bulk it out.
