5 Easy Weeknight Dinners You Can Make in 30 Minutes

April 30, 2025

Let’s face it — weekday evenings can be chaos. Work’s been non-stop, the washing basket’s giving you side-eye, and dinner feels like one more job on the list. But it doesn’t have to be a stress-fest. I’ve pulled together five of my go-to weeknight dinners that are packed with flavour and don’t take more than 30 minutes from fridge to fork. This is 5 easy weeknight dinners you’re going to love.

Ready? Let’s dive in.

1. Easy 15-Minute Spaghetti Carbonara

If you’ve got eggs, pasta, and a bit of bacon, you’ve got dinner. This carbonara is ridiculously quick, creamy (without using cream!), and the perfect thing to whip up when you can’t be bothered but still want something comforting.

Top tip: Don’t overthink it. Let the hot pasta do the magic when you mix in the egg and cheese.

This one’s got a kick to it and is brilliant when you fancy something bold and fresh. It’s loaded with veg, juicy prawns, and a spicy sauce that comes together in a flash.

Serve with noodles or rice (or honestly, straight from the pan if no one’s looking).

Hearty, satisfying, and made in the time it takes to boil pasta. This dish is comfort in a bowl – the sausages add richness and the mushrooms bring that earthy flavour that makes it feel like more effort than it is.
